I woke up with this morning with the need to cure my own bacon. I don't know where this thought/"need" came from, but it was just there. Anyhow, I will be attempting my first curing session, this weekend.
Q: Has anyone here, done this before, and if so, would you care to share some recipes/techniques. Thanks.

Haven't done so yet but it is on my list to get done and one more reason that I bought a smoker.
The info you can get at Amazing Ribs is great and I plan on using their recipe for my trial run. I did the same for the first time I made brisket and was not disappointed. Guys there do their research.

I know nothing of curing; but sounds a bit wrong to remove the skin.
It is just as edible as the meat and simply becomes a line of crispyness near the fat.

I wonder if removing the skin allows the brine to penetrate the sacred meat, more easily. Don't know. Hopefully, I learn a thing or two during this side project of mine, and I will have a greater appreciation for bacon, than before.

In a moment of fuzziness I started the VS 2015 Update 1 - it took 5 minutes to download and now I started the second hour of installation (on SDK 10 now)...I hope I will not regret it...

So I finally click the upgrade to windows 10. Screen changes and says copying. Screen closes without said copy. Click on see upgrade progress. Get screen to 1) start download 2) remind me later.
Still waiting.
