I'm sorry, but I must disagree in part.

A full-blown Unix (or Linux) system is overkill for many tasks, but paring it down to the bare minimum is surprisingly difficult. How do you handle the case of a router that also provides printer and storage ports? At the very least you need:
  • Networking services
  • Printing services incl. spooling
  • Disk I/O
  • Auto-mounting for filesystems
  • Sharing (possibly incl. security)
And to manage all of this, the easiest tool to implement is a Web interface, so we need a Web server as well

About the only thing you definitely don't need is a graphical desktop!
