Competition for resources, specifically sunlight.

Around the edge there is less shade so they don't need to grow so much to compete, those further in have to try to get as high as they can to compete with those around them, although there is a natural maximum they all cannot outgrow.

Also those crops around the edge are likely to get less water as it runs off, faces competition from borders (hedges / trees),evaporation, whereas in the middle conditions are uniform.

How all plants grow is defined by their competition for the resources they need.
Some men are born mediocre, some men achieve mediocrity, and some men have mediocrity thrust upon them.
