One of the reasons could be that the edges get less fertiliser as there tends to be some overlap when casting it which does not happen at the edges.

It's like anything in nature, survival of the fittest. The strongest plants and therefore the biggest move into the centre and make the weakest ones move to the edge. I've seen this happen many a time with my 'crops'.

The crops in the middle of the field feel the love and warmth of the crops around them making them grow better.
The crops on the sides don't get that much love and warmth and it makes them a little sad.
I think I should've become a farmer instead of a programmer. My crop-knowledge is unmatched!

Competition for resources, specifically sunlight.
Around the edge there is less shade so they don't need to grow so much to compete, those further in have to try to get as high as they can to compete with those around them, although there is a natural maximum they all cannot outgrow.
Also those crops around the edge are likely to get less water as it runs off, faces competition from borders (hedges / trees),evaporation, whereas in the middle conditions are uniform.
How all plants grow is defined by their competition for the resources they need.
Some men are born mediocre, some men achieve mediocrity, and some men have mediocrity thrust upon them.

As an aside, the crop in the picture looks like wheat, the other one you have is probably barley. Corn is actually a generic term meaning the most commonly grown grain in the area, unless of course you are referring to sweatcorn.

Around here, crops are fertilized via aircraft, and because of field boundaries, roads and power lines, the crop duster can't open the sprayer fully until the plane is inside the field bounds. The outer edges don't get fed as well as the rest of the field, so growth tends to look a bit stunted around the perimeter compared to the middle.

In addition to the fertilizer answers, humidity is higher in the middle. Farmers know and plan on this, especially in the drier climates of the mountain and desert west.

It is actually illegal! In Canadia EVERY day is Canadia Day and it is against the law to discriminate between days based on the order in which they occur.
That said, no one will go to CPHQ as dear Sean has taken to covering himself in Maple Syrup and then rolling around in Pecan Nuts on unofficial Canadia Day. Chris has asked him to stop as it puts the accounts team off their waffles.
