My better half needs a latin version of:
"I think therefore I am sleepless", and between us we have:
"Cogito, ergo insomnis sum"
But I'm not sure of tense, etc.
Anyone fancy themselves a latin scholar?

Nope, what you have there is correct IMHO.
The word order of the last part doesn't matter in Latin, and the case/tense are correct if the speaker is a male entity.
