How could I get google map data like the amount of cars which are using a street e. g.

I am interested in receiving as much as possible data about certain streets.

Is there a chance to take information out of google here?

Google doesn't record the street full time: it drives a single car down the street once every couple of years taking pictures which it stitches together to form a "seamless" street view experience.

It doesn't take any notice of traffic density because it is literally a snapshot of the street as it was at one particular moment in time.

So no, you can't get that info from Google.
