In the corporate world, and especially between business units, it can be like 100-200 thank you emails a day, if you thanked everyone - clutters the process.

Quite right.
And I would think it depends on the medium of the conversation so far. If conducted entirely in email, it seems appropriate to me to apply thanks that way too. I see no need to dispense with common courtesy.
Problem I see in the Corporate world is that communication seems to be handed almost entirely by email. That's what some people do all day, just write emails. Apparently, you can get well paid doing so too.

Try to be the responsible for the production in a plant in another country with a different time zone and keep it running without email
20% to 30% of my day time goes in Email (coordinating things, asking for info, reading that info...)
aprox 40% of my time programming / debugging / solving issues
20% of my time in meeting (some regular basis, others on the need)
and the rest... getting though previous ToDos that were relegated due to higher prio things (with some jumps to CP like this one to give my brain a tiny rest between points)

I will send out a thank you email when it is warranted. People need emails in the inbox, like they need another hole in the head. No bueno.

"Please send me version 1.0.b" / I send / "Thank you". -> I know he received and considered the e-mail.
"Please send me version 1.0.b" / I send / ... -> Did he receive it? Is he ok with what I sent? Did he even care if I sent him what he asked or not? (Hint: more often than not he didn't).
Besides if I send X to someone and he answers "thank you" he can't 6 months from now tell me "You didn't send me / I didn't receive it".
It's important, especially in asynchronous communication. E-mail is still unreliable by the way, SMTP is still the same and the spam filters or rules go bonker more often than not.

I've no problem with them at all, good manners are a good thing and it's often important to know that the original message was read.
The thing that drives me mad with email is people copying in all and sundry on a message.
To: All Facilities; All Secretaries; All IT Support; All Development; All Operations; All Marketing; All Sales; All Compliance; Reception;
From: A. Berk
Subject: Coffee Machine
Message: The coffee machine on the third floor is making a funny noise.
This will inevitably land every victim with any number of subsequent messages - far more problematic than a single "thank you" mail!
It would be rather nice if Outlook had a "Remove me from this mail chain" option. Especially if it sent a reply to the originator each time a user employed it:
To: A. Berk
From: Mail Administrator
Subject: Coffee Machine
Message: Fred Bloggs has indicated that this email has nothing whatsoever to do with him and has removed himself from the recipients list. If you are seeing a lot of these messages, you might consider engaging your brain before sending an email to several hundred people.
Thank you.

Hopefully they get the message 
Though if your office is full of millennials they won't get the reference. And will report you to HR for discrimination against sh*t threads.

Before the web took off and forums were everywhere, people used mailing lists. You would subscribe to a list and when you emailed the address of the list everyone on the list got a copy, and that is how people help grouped discussions. Most list services ran multiple lists so if you wanted to subscribe from a particular list you would email a specifically formatted message like
"unsubscribe asp.net"
and the list server would remove you from the "asp.net" discussion list.
