The coffee with the carrot and onion blended really makes a fabulous sauce. Make extra and it goes well with almost any meat

Onion, garlic, little bit of cumin. Skim off the fat - it's lamb, so it's fatty - add good quality stock, season well, and use the right potatoes. Rooster or Marabel are good choices. Slow cook the meat for four or more hours then let it cool completely before adding the mashed potato topping. If you don't, the potato dissolves into the gravy and it goes slushy. Sometimes, a good strong cheese grated on top to make it extra crunchy!

For Shepards Pie, I generally wing it - I've made it soooo many times over the years that I don't think about it - the important bits for me are a long, slow cook of the meat, and to taste as you go to adjust the seasoning. The amount of cumin is tiny - around 1/4 tsp per kilo of mince - not quite enough to taste, but just enough to bring up the flavour of the other ingredients. I also brown the meat dry, and the use the rendered fat from that to cook the onions and garlic.
But the ingredient quality is key: using cr@p mince will give a tasteless result, and getting the right potato makes a huge difference!
UK food was certainly dire for a long time - but now? There are over 150 Michellin starred restaurants in the UK, (heck there are 5 in Wales!), and there is some seriously good food being cooked here by "normal" people!

Quality ingredients...My mother always tells this story if someone ask her how her cooking is so tasty...
It's about a neighbor come to ask her to lend some vegetable soup powder, but mum told she has none...So the neighbor asked, how than she makes vegetable soup? She told: you may not believe, but I'm using vegetables... 
As for the pie...I had eaten three different kinds, where the only common was the lamb...One made it with pure meat, the others added vegetables too, one different kinds of root and the other green-peas, fresh corn and the like...
All was tasty, but in a different way...
I made my with a lot of fresh tomatoes cooked with the meat nearly 6 hours...Onion and cumin and a bit of bit cinnamon and peppers of 4-season (white, black, red and green)...

The Podiatrists thought it was a step forward, but the Urologists were pissed off at the whole idea.
The Anaesthetists thought the whole idea was a gas, but the Cardiologists didn't have the heart to say no.
In the end, the Proctologists won out, leaving the entire decision up to the a*holes in Whitehall.

Although.. I do wonder why people are still using Oracle! 
I mean, if you hate MS, why not use MySql instead?

Their stock sure is; it got a beat down today.
We have our main stuff on Oracle and it doesn't bother me, though I prefer SQL Server. Some of our smaller applications use SQL Server. My biggest complaints with Oracle is that it is very finicky compared to SQL Server, those cryptic error messages don't help much, and there are compatibility issues with previous versions of .Net and Oracle. Also, SQL Developer and Toad are horrible IDEs; which doesn't make development as much fun as SQL Server.

Can't agree more. Oracle SQL Developer is leaking memory horribly. Every now and then it becomes unresponsive. Toad too has its own issue.. pretty unfriendly UI I would say..

Hate Oracle myself, but have to use it as some of our system aren't designed by the vendors on anything else.
There licensing rules on virtual machines and how many core are on the machine instead of how many you are using make it an expense pain in the *

For the same reason that MS has hardly ever lost business customers, no matter their antics: they have enough money to ensure continuance of service.
Ever since Db4, I've been wondering why more people don't write their own databases. It ain't rocket surgery -- and if you don't use sql, there ain't no sql injection.

I'm working on SQLServer nowadays, but I would prefer Oracle.
I think it's a lot to do with on what system you learned SQL.
SQLServer is more forgiving than Oracle though, it's a bit like comparing VB with C#.

A few years ago I got saddled with having to work with Oracle and thought I would brush up on it (I had not used it in a decade). When I ran across an article by an Oracle DBA who praised Oracle for their requirement for all caps on TABLE AND FIELD names I ducked on the project. There are many things to dislike about Oracle but that was a deal breaker.
Oh yeah and the POS Toad is another one.

There is no such requirement, default behaviour is case insensitive. If you want them case sensitive you need to wrap them in double quotes "", same as [] on SQLServer.
Personally I find the limit of 30 characters for Table and Column names a lot worse.

MySql is also owned by Oracle! 
I'm actually surprised that it still exists and is free and open source. I would have thought that Oracle would have either retired it or made it a paid product by now. 
And seriously, after having worked with MySql: It's crap too! I would never, ever use it myself in a production system. It's a Mickey Mouse database system that is good for nothing but small homemade websites with minimal database requirements!

I agree , for me I have a lot of time for Postgres - bit of a learning curve if you're from MS background but worth the effort.
