Part of the tea drinking protocol is to leave it to cool for a few minutes while you engage in banter or read a newspaper. You may, however, take brief sips even at its hottest, cooling it by introducing air using much the same technique as a wine taster with the attendant improvement of taste perception. Tea is a drink to be appreciated, not knocked back in gulps as coffee is in certain parts of the world which shall remain unnamed.

Having said that it is considered entirely normal in China to slurp soups and the like at far greater temperatures (due to the fat content) than a cup of freshly made tea will ever achieve. Of course the concomitant is the highest rate of throat and mouth cancers in the world so I'm not recommending it!
