AFAIK WinXP lets you choose color depth and DPI resolution for each monitor individually (under Display Settings/Settings/Advanced).

I will investigate when I can, unfortunately I don't have a spare monitor available right now. It may take a couple of weeks.

This[^] seems to suggest Vista is a (temporary?) step back in this respect.
