You can't stop google from "seeing" you - it maintains a cache of "old" pages which it can serve on demand (you may have seen some of these in the past when a site is down temporarily)

But you can close your account by go to Your Settings[^], click on "Privacy" and select "close my account". Hit "Save" and you're done.
