We have a server running SBS 2008 and its got quite a few things up and running but for future plans and better security we need to move the contents to another machine.

Not counting a straight image and restore of the OS HDD, what other way is there? A whole domain is involved and emails and DNS and other stuff.

Here's[^] the migration guide from microsoft.

<edit>Sorry, but SBS is supposed to be hard to Migrate. Microsoft has created SBS to give you an entrylevel pricing to their backoffice products. You're supposed to upgrade to the real stuff whenever you need to upgrade. Adding a fullblown Exchange server, SQLServer or or directory server to your domain is a walk in the park comparably.
