Save text in input text box into PHP variable without pressing any button or key

Hi, any idea how to make it? I think it needs to be done in Ajax but I never worked with that before and i cannot find it on google.
Im using jquery-ui's DatePicker:

<input type="text" id="datepicker" name="datepicker" placeholder="Hladať podla dátumu" />

What I have tried:

I was looking it up on google but I didnt find a solution, non of them worked.
