I feel that coding during my free time is often a way to get things done, especially with the languages I'm learning (and have yet to learn) in my programming career.
Besides, I still code for fun, there's a lot of mini-projects that I want to get done, and the free time can be used effectively. I'd rather not have it go to waste.

When I'm vacation/holiday, I'm on vacation/holiday. Period. No email, no fax, no texting, no Visual Studio, etc.
Otherwise, what's the point of going on vacation?

I am using the American (rather than UK) translation of the word holidays.
Holiday means a day off from work - not that I went somewhere with palm trees and blessedly no shame.
When I'm gone, I'm gone! Reservations already made.

Never coded on holiday when I was working, but now I am retired and I code for fun, so I code on vacation if it suits me.....
Well actually it was also fun when I was working and I got paid !

I work @ work during the week and spend about 20 hours on the weekend tending to my children[^].  Building and maintaining polished apps is a great source of joy for me. There's nothing else in life I'd rather do than build software.

Usually, I just poke around and experiment with things when I'm on vacation. Maybe not so strangely that I have some of my best ideas when I'm relaxing on the deck listening to the surf.

if I am coding on holiday or vacation it is most likely for something that I am doing on the side. when the work hours are over that doesn't mean for me that the coding hours are done.

I used to code a lot on vacation.
Actually I took vacations to code, usually to deal with a new technology or work on my own projects.
Now I code a lot less on vacation but still I usually take a bit of time to try that edge tech thing that just came out...
No code at all, and usually not even a laptop is on those palm tree and long chair kind of vacation.
There is where I do my detox isolation therapy trying to touch as little as possible anything that has a screen (phone included).

They didn't pay me to work in holidays, but to do other things.
Hence, as soon as my boss found out what my mobile number was, I changed it...if he provides the mobile, he can call it. If he provides the holiday, he can ruin it.
But if I pay for the phone, or I pay for the holiday, he can go forth and multiply...my time is my time.

What I do only I can do here, no-one else has anywhere near the knowledge or skills.
So if something that stops the business working comes up when I'm on holiday I make myself available.
If I don't do this then they might start to seriously question why they have allowed themselves to get in this position and that will lessen the strength of my bargaining ability with them.
When I went to Lanzarote last year they paid my wifi bill at the hotel if I took my laptop with me. I didn't hear from them once.
I don't think I've ever had to actually logon whilst on holiday, although I did have to spend about half an hour on the phone talking someone through stuff in the car park of Paignton Zoo last summer.

I was going on a Caribbean cruise and my boss insisted I take the company provided cell phone with me and keep it charged and ready the entire time - which I scrupulously did - even taking a photograph of it plugged in and powered up in my cabin. I failed to mention to him that, at that time (this was back in the last millenium), there were no cell towers in the middle of the ocean so most of the time there was no signal! (I was about to say there were no bars but there actually were plenty of bars on that ship!)
On top of that he insisted on having the ship's ship-to-shore telephone number. This was fine except the cruise was switched to an identical sister ship at the last minute so he had the wrong number.
It was a very peaceful cruise - apart from the storm.

There should be an other option. As personally I only code while on holiday for personal gains / learning

But the thing is that nobody actually thanks you properly for sacrificing yourself and your free time. The very best you will get with a good employer is time or monetary compensation for your efforts. In the worst case scenario with particularly psychopathic employers, they'll actually take this to mean you'll always put work first and it will subsequently be expected of you each and every time.
You are your own most precious resource, if you deplete yourself or break yourself beyond repair because you've not stood up for yourself you only have yourself to blame. There's nothing wrong in saying no, the managers will have to deal with it, that's their job. It's your job to look after yourself, nobody else will do it for you.

In our organization our customers are working when we are on holidays, if there are any urgent fixes then I need to rush to office and resolve them.
But if I am out of city then my replacement does same task. So ultimately, "If there are some urgent fixes, then come to office and resolve them, AS CUSTOMER is GOD"
