1) Win7. It's fast, does everything I need, doesn't require me to adapt to a pointlessly new interface (they even changed the keyboard shortcuts, the id-10Ts), doesn't need an update a week that in 50% of the cases would brick my machine, doesn't have Ads integrated into system software, is more backward compatible (and I need it for reasons).
2) Clean installs everywhere, on Linux too. Updates break things way too often to be a viable solution.

There are some very good third party shells for win 8 + to get rid of that sh*tty MSFT GUI.

ClassicShell for example - I have it installed on my work PC because my colleague had to switch constantly between XP and (at the time) experimental Win7 [experimental in the sense that we were experimenting installing it on production machines, which are dedicated pieces of hardware that must run on production lines] and, while I reverted all the settings to win7 default as I got used to it, I still keep some settings tweaked.
Usually I avoid third party shells to keep the machine as light and with as few points of failure as possible. I remember the times of the dashboards for Win95 and the truckloads of trouble they caused...

Precisely. I hated the first times when every day there were updates - I started as a "Good User", keeping it updated. Except that it was a notebook and it bricked itself since it refused to turn off while intalling updates until battery failed and the system died.
Plus a couple of updates that forced me to jump through hoops in order to restore functionality or reinstalling from scratch... Now I reverted to the "Good Ways", aka "I will not install a single update if it doesn't solve a problem I have or adds a functionality I need and even in those cases I will wait at least a week before installing it".

2: I did an upgrade, haven't needed to do a clean install yet (mostly cause I'm to lazy ), everything works so... (but I'm fully aware I'll probably have to do a clean install at some point)

The Wookietab came with Win 10 and Android pre-installed as a dual boot: the hardware comes with only 64GB, but Windows plus Android takes "just" 20GB of that, including 5GB Android storage, so Win10 can fit in < 15GB.
But ... start adding VS, LibreOffice, Paintshop Pro, etc., and the space starts to add up.

Griff, what's the WiFi like on the win10 side on the Wookie ? , mine is good on Android and shite on Win10, it doesn't find any networks apart from my main home one - so is useless on the move

It's been fine everywhere I've taken it so far: it even worked on UK trains last week! (Though it dropped out each time the train stopped in a station, but I'd blame the train company for that one.)
I can't comment on the Android side, I hardly use it.

I think mine isn't setup correctly , it connects to my home router as long as I'm near to it, it doesn't connect upstairs ( no networks found ) and as for outside networks nah ( doesn't even see them ) I'm assuming Android and Windows share the same WiFi device so it can't be that at fault because Android works perfectly. Any ideas ?

On the android side, install this: WiFi Analyzer[^] and have a look at the signal strength / channel congestion.
There is a similar app for win 10: WiFi Analyzer[^] from a different author, I just installed it and it gives me similar numbers, so it's worth a look at your networks with that as well.
Do you have WiFi Sense turned on in WiFi Settings?

Just looked and it stated you must sign in using your Microsoft account to use WiFi sense , which I can't of course as I have no WiFi

Not sure you need WiFi to sign in with your MS account - but when I did for the first time on the WookieTab it switched my login account to that and I now need to enter a password / PIN to exit sleep mode, which is annoying ...
Is there any difference in wifi signal strength between the Windows and Android apps I suggested?

I've got the same adapter as you but the driver is different, 3008.31.401.2016 - dated 29-04-2016. If I try to update driver via Device Manager it says I have the latest installed

If you use powershell to export your drivers:
Export-WindowsDrive -Online - Dest C:\Drivers And then look at the folder (for me it's:
netrtwlans.inf_amd64_cd23a6439266bd9a Open the netrtwlans.inf file (Notepad is fine) and see what it says.
