Speaking for myself my ability to buy larger amounts and consume larger amounts versus long ago isn't correlated to 'appreciation'.
More disposable income on the other hand...

I wouldn't be surprised if all of the following are true.
1. Cost. Glass, production and delivery were much more expensive in comparison to total income. So someone that wanted something 'special' would get a smaller (cheaper) one that was more likely to survive the trip to far off locale.
2. Availability. Actual wine (versus local alcohol) was a luxury even for the rich (the 'best' always came from somewhere else.) Thus savoring it and sharing was more viable with a smaller glass.
3. Perception. Due to the above the perception was that it was 'special' and thus more valuable even when circumstances (really wealthy and closeness to source) would have dictated otherwise. Thus 'respectable' people were expected to savor the experience. And a small glass made that more readily apparent.
