He's a metalworker (and time travelling lathe owner) but don't let that put you off - he's one of those practical people who know what they are doing with metal, and computerising routers, and ... and who can put together a damn good video to show it. Worth watching, which is rare for YouTube these days - there is far, far too much crap there just for monetisation.

In England we used to have a gas range with an eye-level grill/toaster. We could make English toast (toasted on one side only), cheese on toast was easy - anything on toast was easy. Why don't they do eye-level grills anymore (in America they call them broilers, I think)?

What the USians call "Broiling" is called "Grilling" in the UK.
What the USians call "Grilling" is called "Frying" in the UK.
What the USians call "Frying" is called "Deep Frying" in the UK.
These terms are flexible and are changing in the UK as the pernicious US influence spreads like a virus through the Uk population.
This is why it is called and "Eye-level Grill", not an "Eye-level Broiler".
I believe that they became less popular because they got in the way of modern extraction hoods. I still miss them though. [^]

Most important is a proper knife.
Get a Windmühlenmesser [^] in carbon steel with Solinger Dünnschliff and you will realize that all knives you ever had before were blunt.
They need to be treated well though (or they will get stained), and regularily sharpened.

I went ceramic over five years ago, and still have the four I bought then - three of them are still just as sharp as the day I bought them with no sharpening.
I still have my steel knives though, because ceramic can't be used on bone - the edge is too fragile and you get chips.
I did buy a proper ceramic sharpener as an import from Japan because I know my wife ...
That's why "Three of them" haven't needed any attention!

Yeah, they hold the edge much longer than a steel knife, but I have several dislikes with them.
Higher friction is one, the brittleness is another. You really can't do this[^] with a ceramic knife.
The brittleness also leads to another problem as far as I'm concerned, most ceramic knives have a very high edge angle of up to forty degrees to compensate for the brittleness which makes them less... well, not less sharp, but rather... they simply don't cut as well's a knife with a 10-15 degree edge. You'd know what I mean when you cut a tomato and the chopping board remains dry.
So they really are each others opposites with different strong points.
That said, I really should buy my wife a ceramic knife of her own.

TBH I wouldn't do that with my steel knives either!
And you can't crush garlic with the blade either.
But I vastly prefer them for "normal" tasks: salad prep, veg check, chopping onions, meat, ...

I get your point, but it's actually when you chop onions you really notice the difference using a sharp knife with a low edge angle, there's no need to cry as the onion cells aren't crushed.
It's rather for flexible stuff like meat where the secondary edge angle doesn't matter that much.

Always did it that way, except I do the horizontal cuts before the vertical ones, it's easier that way.
