There are too many encryption methods and even very different principles and qualities of approaches. First of all, you need to understand your protection scheme, the key distribution; what goes where. So, first, you need to understand if you need symmetric or asymmetric encryption. Also, many confuse the use of cryptographic hash with encryption.
As to the data types, it does not matter what to encrypt. All algorithms work with array of bytes.
