Hi I'm looking for a book to learn how can I build a program that can convert speech to word?

Have you tried to google it? There should be a lot of information. I think there are several articles here in CP as well.

Other posibility is to check the online book handlers with user reports

I had google it, but I found there are many fields in voce recognition, like speaker identifier , speech recognition, natural language processing , etc.
I am newbie in this field and I want to be sure I must study in which field to reach my specific purpose(converting voice to word)?

Also I wanna know the reference books those are taught in best universities in the world in this field!

How do you define 'best'? There are plenty of reference materials on voice recognition. The reason they are different is because it is a large field and there are many implementations and many platforms that use it. We cannot guess what your specific requirements are and so cannot make specific recommendations.
