I am starting to design a system to control a number of washing machines and tumble driers in a laundrette, from a single interface. At this very first attempt I will stay Wired.
I need inputs such as Digital temperature readings, and outputs such as doors locked, etc.
32 bits will do, 64 bits would be better Anyone any idea?

I think that is a question for Google; it is not the device only, but several other factors that you should look into to decide which device you should add.

I have used Momentum I/O modules from Modicon/Schneider in control systems with hundreds of I/O points and they worked pretty well. They speak Modbus/TCP and that is a very, very simple protocol to implement. I had a driver for it up within a day. I am not sure if they have 32-point cards but I know they have 16-point cards. Take a close look at hte Arduino platform because it is a good and open platform for which are a lot of additional interfaces and sensors available.
